My and my friend were talking about making some sweet strawberry mead. We were wondering how much alcohol is good before its too much. I was gonna make a 5 gallon batch in a 6.5 gallon carboy. There isn't really a limitation on how much honey I can have in the batch. I'm thinking of putting 20 lbs of it in. But how do you calculate OG for honey? I've heard of multiplying 38 x lbs of extract and dividing my gallons to get the OG.

I am a bit confused as to how to add the strawberries. I heard you can freeze them and then just heat them up in a pot (not boiling) and then add all of that to the fermenter after you've put the must in. I also heard about adding them later for mainly taste but I don't think I want to do that.
