Decided to try my hand at making a Maple Mead (acerglyn?). 1 gallon batch, using approx 2/3 of a litre of Maple syrup and about 1kg of wildflower honey that just arrived. Added about 1-1/2 cup of strong Earl Gray tea, yeast and energizer. S.G Is 1.10 on the dot.

Fingers crossed.

Smells really good, like maple and honey. I used 71B yeast. Just started it so don’t know what it will look like in a few says.

i have only used D-47 for mead, i am making a blueberry mead right now and prior to this one i used it on a cider boosted mead so i could have myself a 10% is mead. i also boiled 2.5 pounds of the honey. that turned out great.

i was just reading about 71B sounds like a great yeast for Mead might have to give that a try. Are you doing staggered yeast nutrition additions or planning on aging?
 
I added some energizer at the beginning. Still extremely new to the hobby so my plan is to let it age for a few weeks then bottle, and age most for the summer. This is what it looks like today.

Looks like it's fermenting well. If you can mix it a little to let some of the C02 out of solution. The oxygen mixed in will keep the yeast healthy and in suspension.

Too much C02 in solution with mead can become toxic to the yeast.

If you can't mix it no worries the plan you have should result in good mead!
