I'm going to be brewing a very dark coffee stout soon, and was going to add some lactose as well as maltodextrin. The recipe calls for 1lb lactose and 8oz of maltodextrin.

I was just wondering what, if any, negative effects there would be if I used a pound of both the lactose and maltodextrin. I know the lactose will give me a sweeter taste as its an unfermentable sugar, but the MD is supposed to be tasteless.

Will I just get a "heavier" tasting beer, or will that much MD somehow affect the taste? I'm trying to make a stout that gives you a full feeling after 1 or 2 bottles.
 
The sweetness of MD varies from about 1/10th as sweet as sucrose to 1/4 as sweet. Lactose is about 1/5th as sweet as sucrose, but some people find it to be almost as sweet.

Make the recipe as-is. You can always add more MD at bottling.
 
Another question. How much would 1/2 of maltodextrin and 1lb of lactose raise my FG?

Judging by the ingredients, I should be looking at around 1.074 for my OG, and knowing how much unfermentables there are, I know my FG will be a lot higher than my IPA and whtnot, I'm just trying to figure out how much higher.

Any ideas, or do you need more info?
 
8 oz of malto dextrin is probably enough to thicken up Lake Superior...:confused:

I'd stick to one or two ounces tops...then sample again before adding more. ;)

If you look at the ingredients label on Propel water the second one is malto dextrin, right after water.

I used 8oz in a stout I did and it came out just like I wanted. Plenty of people use 8oz and sometimes more.
 
OK, I stand corrected..., but I've never used more than 2 oz myself and was satisfied with the results. ;)

Sounds like the brew is pretty thin to begin with. :confused:

I knew I was going to be using Sugar additions (Belgian and honey) so I upped the amount of MD to help combat that.
