Lookin' to try a new hop combo in my fave Pale Ale recipe...

My favorite pale ale recipe (so far) is pretty simple:

og: 1053, fg: 1011, ibu: 35+ish​

90% briess brewers malt​

9% briess munich 10L​

1% flaked wheat​

Cascade @60 for about 15 ibu​

Cascade @15 for about 8 ibu​

Citra @15 for about 15 ibu​

dry hop with way more Citra​

yeast: S-04, kept under 68F​

But I'm keen to try something different, hop-wise, and my first inclination is to ditch the Cascade (it's a little grapefruity in this recipe), and either go all Citra, or replace the Cascade with something different. Any recommendations? Hoping to avoid pine/grapefruit notes...

You're trying to avoid pine/grapefruit, but what are you after? Citrus? Tropical? If so, what specifically? Citra and Mosaic are an awesome combo. Citra and Amarillo go really well together too. Citra and Idaho 7? Citra and Vic Secret? Citra and Strata? Citra and Galaxy? Citra and Azacca?

And here are some combos that I haven't personally tried that might work: Citra and Nelson Sauvin? Citra and Nectaron? Citra and Sabro?

I replaced Cascade with Centennial hops in a favorite hazy IPA recipe which includes Citra as Centennial has less grapefruit intensity while being similar in other ways. I didn't like grapefruit at all growing up. I'll eat the ruby reds now but mostly because the rest of the family likes them.

Truth be told, I'm not really certain what I'm after! I do know I haven't loved any commercial beer that advertised "mosaic hops" (too piney). My best guess is that Citra provides all the sweet/tropical (and most of the citrus) flavor I'm after, and something with a bit more orange/lime flavorama will be the icing on top, so-to-speak. I've got Mandarina Bavaria and Amarillo in my freezer, and am leaning towards the Mandarina, but looking for suggestions!

Motueka has a very lime/lemon character (with, in my opinion, no real orange character) and it has zero pine character. Some say it has some tropical character, but I don't really get tropical from it.

Amarillo is definitely much more orange and pairs really well with Citra. It also doesn't have any pine character (which Mosaic does admittedly have).

Mandarina Bavaria is more of a lemon, tangerine character, which would go nicely with the Citra, but as far as I can recall, it does have some pine character to it.

I put Pacifica in with those other two for my hazy. Also Simcoe, but the Pacifica is probably more what might be interested in.

I hope I never get tired of mixing Citra and Cascade. Mandarina Bavaria sounds like a great option. I have a cream ale I brewed with it, and it has some subtle orange flavors.

I've used Cashmere before, and that gives off some great lime notes.
