Look at gluten free recipe

I bought 3 lbs of sorghum, 4oz maltodextrin, wild honey, d45 candi sugar. My hop will be saaz. I took the recipe from morebeer.com for honey ale. I'm going to do a test batch of 1 gallon for my gf who can't have gluten.

1lb sorghum
1oz maltodextrin
.3 lb honey
Some d45 candi
Earl grey tea

.5ozsaaz 30min
.5ozsaaz 10min


I will make a earl grey tea boil 1.25 gallons and than just the difference in boil off and add the steep tea to get 1 gallon. Aka 3-4 teabags ?

Should I add something to make it better or more tea bags? Thoughts?
