I started out making mead, but it takes so long to make sure that I begin making beer while waiting. now I realize that making me this much simpler. I have a 6.5 gallon carboy. I would like to know if I can make a basic primary with water and honey and yeast and then divide it up into different secondaries using different fruits for flavoring. I have a lot of 1 gallon carboys. has anyone done this before?

It's a common practice, I believe... Just be careful to give the yeast a nice nutrition in primary or you may end with a big stuck fermentation and that can yield some nasty flavors... Honey by itself is really poor as to what yeasties need.
