Hello!
Could you say if this is mold? I covered it with a coffee filter, then put it in my closet with a towel over it. It has had NOT been exposed to sunlight.

Hello, which part of this photo are you asking about? The brown bits around the edge? Are they on the top or underside of the scoby?
 
It's doesn't appear to be mold in this photo, it looks like yeast bits. Do you see any fuzz? That is a sure sign of mold.

Have you considered using cheesecloth instead of a coffee filter? I've heard it allows for better airflow.
 
I'm still new to kombucha but doing my research I read that the holes in cheesecloth are too large and fruit flies can get in.

There are different meshes of cheesecloth available. Use One with smaller mesh and you can even double layer it for added protection.
