Hello, recently I've been thinking about drastically stepping up my kombucha operation to two much larger continuous ferments. Has anyone considered creating a small controllable enviroment for a ferment? like a small "grow" tent with a carbon filter and an adjustable heat system? it seems like a good way to ensure you have a sterile environment
 
I have mine enclosed (not air tight) in foam with heating pads on a dimmer switch to adjust the heat. Works well so far
 
I think that this is pretty excessive. I have done some pretty large ferments, and a friend of mine does 30 gallon batches (30 1 gallon jars) with just regular jars and cloth rubber banded over the top. Every third or fourth time they might have 1 jar contaminated and have to toss the 'bucha and wash the scoby, but that is a pretty good success rate in my book. Kombucha is pretty forgiving, and has been fermented for many many many years in conditions that do not resemble sterility. Its pretty forgiving stuff, its not liek you are isolating and growing mushroom mycelia or anything, your fermenting!
 
I just got a $300 hydro bill for keeping my brew shed utility room at 78f this winter (last 2 months). Im going to be picking up a cheap old fridge and putting a heating pad on a controller and a air exchange fan on a timer.
