Kegs get Flat and Off Flavors?

It seems as though my kegs get flat or even off flavors after they have been tapped. I force carb until my desired carbonation. One problem might be that I dont keep my pressure the same as I drink the keg because my CO2 tank doesnt fit in the fridge. Maybe a leak in the keg, but I fairly sure their air tight. Any ideas?

What kind of off-flavors?

If you're disconnecting the tank from the gas, that would explain why it gets flat. Just like if you open a bottle of soda, the soda will get flat. If you're not keeping the tank on gas, and pour a pint (opening the bottle), but don't add more co2, it'll go flat. I keep my tank set at 12 psi, and keep it on the gas all the time and have no issues with flat (or overcarbed) beer.
 
Sounds like you disconnect the CO2- Especially since it it is freshly carbed, your beer is still absorbing CO2, as well as loosing pressure when serving. If you have a drain tube, see if you can feed your air line through there (probably have to take one end off), or you might have to do some drilling. Keeping the CO2 connected will make a big difference.
