Would it be possible to force carb with something other than CO2. i.e. Helium / laughing gas?

Just wondering! :)
 
Sorry, you need CARBON dioxide to CARBONate. People do use beergas, which is a mixture of CO2 and nitrogen to push already carbonated stouts through the restrictor plate in a stout faucet in order to get that famous cascading head.
 
You can force any gas into a liquid solution, I just don't know what it would do to the flavor. Carbonic acid is produced by carbonation, it's the key difference in flavour comparing flat to fizzy drinks.

However, smelling the aroma of a nitrous oxide IPA would be killer.
