My sister is getting married soon, and I'm planning on brewing an IPA/Pale ale for the reception. I normally do partial boils, and keg after fermentation. Having a kegerator for normal beer dispensing, I usually force carbonate for 48 hours at 30psi. For this batch for the reception, I plan to brew, ferment, and force carbonate before traveling 7 hours to the destination. My biggest concern is whether I should force carbonate before the trip, what temperature I should keep the keg (if it makes a big difference), and using a jockey box, how should I set up this rig...I plan to brew tomorrrow, and I need some answers quick. There's a possibility the keg might be stored in the car for the long trip, and I really need to know if it's okay to force carbonate before the car ride, or to wait...since I normally force carbonate at serving temperatures. Any input would be greatly appreciated...I definitely need advice on using a jockey box too..
 
From my experience I usually use a Hand Held Picnic Faucet for dispensing. I use a small 5 gallon bucket with salt and Ice to keep it cold. I also have a second CO2 tank that I use for just these occasions. I would carbonate this as usual. I keep the PSI really low to keep the beer from foaming when serving. I really don't travel that far with a keg. If you have a pickup then you can do the traditional keg in a trash can full of ice. You can also try and find a igloo chest cooler that the keg can lay in while in the car. I would definitely try to keep it cold because I have seen the beer get some weird yeast type of floaty things in the beer. Flavor didn't change but it was weird to see things floating.
