So I just bought a freezer. I have a STC-1000 temp controller and I was wondering my freezer has a temp adjustment knob on it which has numbers 1-5. What should I set it to when I plug it into the temp controller?
 
Coldest setting. That will make sure that when the temp controller gives the freezer power it will always be cooling.
 
I too built a temp controller based on the ST1000 only to find out that once I adjusted the calibration screw on the thermostat controller for my freezer I was able to get it to control between 35-39f so I do not need my controller till I build my fermentation chamber.
 
Also, do keezers with out a collar have a problem with sweating or collecting water inside of it?
 
I think generally speaking you'll have some condensation regardless of whether you have a collar or not.... A bucket of DryRite should keep it under control
 
I have an Eva-Dry 500 but I have not tried it yet. If that does not control dampness, I have Damp Rid and I know that stuff works.
