Well I am about to build my first Keezer and my question is when building a collar should I use some form of insulation?

Also should I just do 1 layer for the collar or do a 1x8 with a thinner piece lining the outside?
 
Sheets of foam can be bought at the big box hardware stores, and cut to size. Silicone can be used to "glue" the base of the collar to the freezer, and also to secure the foam to the insides of the collar.

Wood has an R value of like 1.5 - you definitely want to insulate - Inch and a half or two of foam would be good.
