Uncle Sam said I paid to much last year and he's sending some back! So I was think of building a coffin keezer, however I have heard that the tower with build up with moisture and start to rot. Is this still an issue if a fan is used along with insulation?

If you insulate the tower properly, I don't see why this would be an issue. My coffin box uses a combination of foam insulation and metallic insulation tape so that there is no wood exposed on the interior, only insulation. I haven't noticed any moisture issues with mine (yet).
Of course a fan for proper circulation is also a good idea.
