I'm new to kegging so i've been having trouble dialing in my psi at 12. I have a temp control coming in the mail to keep my fridge at 45. I'll turn up the dial when it's low and come back later and it will be over shot by a few degrees. Guess i just need a tutorial
 
If the temperature in your fridge is varying much, the pressure will also. Carbonation is very sensitive to temperature. Once you get the temperature controller, it should be easier.
