I found one of ss and one of copper. It seems to be double the price, is that worth it?

No. Copper is a much better thermal conductor than steel, but we are talking of small surfaces here. The difference could be a few minutes. But more important than the material is the actual temperature of the running water. That alone makes the bigger difference in cooling time.

And stainless steel has it's own advantages: doesn't oxidize and is more durable.

I'd say, go for the cheaper one,especially when one is double the cost.
