I have worn out 2 over the years and am going to build the 3rd. The one in service now is not completely dead and am planning to use it as a fermentation cooler / conditioning / carbing vessel. The coldest temp that I can achieve is 45 f, I have a CO2 line through the side and was going to use this for force carbing. I was also going to route a CO2 line through the the old spigot hole to be able to seat the seals on kegs after filling and for pressure transfers out side of the fridge. Is there a good median temp to set this to that will achieve the purposes that I am planning (Ale fermentation control, keg force carbonation and bottle conditioning) or will I have to adjust the temp for each activity?
