I have a jar of kombucha at the back of my fridge that I purchased at Mother Earth News Fair in September. It's two months old and has been sitting at the back of my fridge the whole time. Is it safe to drink? Can I make a scoby out of it?

Yes it is safe to drink and you could probably use it as starter so long as it wasn't pasteurized. What brand is it? If it's a 16oz bottle try starting only a half gallon or less to limit the possibility of mold growing. Let the kombucha warm to room temp on a counter before opening and starting it.
Or just drink it.
