Since I've started brewing again (after being away from the hobby for more than a handful of years), I made 7 different beers.

Jan 30 AHS Amercian Amber extract - drinking
Feb 6 AHS London Pub Ale - mini mash and extract - drinking
Feb 21 EdWort's BCB Haus Pale Ale - first AG - kegged and aging
Feb 24 BierMuncher Centennial Blonde 1 Gallon batch - BAB AG - cold crashing
Feb 27 Orfy's Boddington's Bitter - AG - cold crashing in primary
March 13 Double brew day
AHS Anniversary Blonde Rye - extract - in primary
EdWort's BCB Kölsch - AG -

Is this normal? Am I obsessed? Or, have I just fully embraced the concept of "the pipeline?"

It depends on how long a period you used to brew all those. In the past year I have made about 16 different beers. Is that normal?
