Hey all, just looking to get some input on my most recent brew. This is my third AG and I felt like everything went much better than the first two now that I have the equipment figured out a bit better. The only problem is that the current product tastes nothing like I expected. It is very bitter and almost offensively earthy - much more than I expected from it. It was in primary for almost the entire last month and was recently moved to secondary. The only thing odd that I have noticed is with the continued settling in the secondary I have two layers on the bottom - the normal yeasty light brown mess and a darker gray/green on top of that - something I haven't noticed in other brews in secondary. Current plan is to age it as long as I can and/or eventually age it with some bourbon cubes + vanilla bean. That being said, here's the recipe:

Boil volume: 6.0 gal
OG: 1.083
FG: 1.021
Bitterness (IBU): 36.4
Color (SRM): 19.3
ABV: 8.2%

Maris Otter Malt 6.000lb Grain 36.9%
Vienna (US) 4.000lb Grain 24.6%
Biscuit (Belgian) 2.000lb Grain 12.3%
Candi Sugar, Clear (Belgian) 2.000lb Sugar 12.3%
Crystal 20L 2.000lb Grain 12.3%
Chocolate Wheat Malt 0.250lb Grain 1.5%

[Hops]
Northern Brewer 1.50oz 8.0% AA Pellet @ 60 min, 29.7 IBU
Cascade 1.00oz 5.5% AA Pellet @ 15 min, 6.8 IBU
Cascade 1.00oz 5.5% AA Pellet @ 0 min, 0.0 IBU

[Yeast/Other]
Scottish Ale yeast 1.0 unit(s), Yeast Edinburgh white labs

[Batch Notes]
Mash 1hr 155deg 4.8gal, sparge 3gal 190deg, 6gal boil o.g. 1.080. 11-6-11.

Again, just looking for input as I don't know if this is what to expect from this brew or not. Thanks!
 
The bigger the beer, the longer the bottle conditioning. Apparently you haven't bottled yet?

Gotta relax and wait man. Your grain bill looks like a lot for the yeasties to digest too.
 
It is going to be kegged. I'm willing to wait as long as I have to, it is just nowhere near where I though the taste should be but it doesn't taste terrible. Just not familiar with the yeast and some of the grain used so I'm just checking.
 
To me, Vienna in larger quantities can sometimes taste fairly earthy/nasty/tannic. Also not a huge fan of Northern Brewer in large amounts, but the Cascade should cover it up well.
Other than that, you need a lot more aging with that beer.
 
Thanks for the input guys, sounds like I just need to sit on this one for a while which is what I kind of expected.
