I built a keezer/kegerator behind my wall mounted taps. I use the Inkbird 308 for the temperature control, but I find the temperature swings create a lot of water build up with the "freezing" and "thawing" periods. Any suggestions on success people have had with the controller to limit the water build up?
 
You need to seal up the keezer better so that you don't get moisture ingress from the atmosphere. The controller setting won't affect the condensation much. You also might want to put a moisture scavenger (like an Eva-Dry) in the chamber to suck up what moisture does get in. Also, minimize opening and closing the keezer, as tons of moisture gets in every time you do.

I agree with Doug. Do you have a fan running inside the keezer? I feel my keezer is sealed up well but I still have some moisture buildup during the on/off cycling period as you mention.
I think I will try adding a container of damp rid and see if that works or even a second fan placed on the compressor hump.
 
In addition to the fan (I leave mine on all the time to circulate the cool) add a desiccant, like DampRid or a moisture eliminator from the dollar store. Or, you can make one yourself:
