So I am new to brewing and I just finished brewing my second batch of KT. I brew 3 1/2 gallons jars per batch, bottle, then let them sit out to carbonate for 2-3 days longer, then put them into the fridge for drinking. I have noticed a huge difference in carbonation from bottle to bottle. Some volcano out of the bottles, some are a little carbonated, and some are very flat. I have no idea what this inconsistency could be caused by. (BTW it doesn't seem to be linked to which 1/2 gallon jar they came out of). Thank you for the help.
 
Might need a little more info...what type of bottles are you using for second ferment, seals, etc. Are you adding flavorings to second ferment?

How does your brew taste before bottling for second ferment?

Just guessing but I suspect your bottle seals could be the issue. Some of my caps are from old KT brand bottles so when pouring for second ferment I place a piece of freezer bag plastic over those bottles then screw on the cap to get a better seal. I actually let my bottle set for an average of 5 days using old kombucha bottles before refrigerating and batch brew 3 gallons about every 8-9 days.
 
I feel that the bottles are not the problem but it could be. I use these bottles and I basically just got them: 500ml (16 oz.) Clear Flip-cap Bottles, 12 Pack https://www.amazon.com/dp/B002Y29JMW/ref=cm_sw_r_cp_apa_QB6qxb750PFFZ
 
I haven't used those type of bottles but many do... After a few days during the second ferment tilt the bottles slightly and see if any are leaking. If so then you know some of the carbonation is leaking out also.
