I currently have a experimental Chai tea wheat beer fermenting. The wort tasted delicious after the boil . I used a White labs Belgian wit yeast as well to get the spicy clove like taste from them. Hopefully it will turn out.

I added bitter orange peel and coriander at 5 minutes to flame out. Those are the traditional wit beer spices.

Add some candi sugar before the boil, like a pound or two.
1/2 oz of bitter orange peel, and 1/2 tsp of cracked coriander 15 min before the end.
1/4 oz of bitter orange peel, and 1/2 tsp of cracked coriander 4 min before the end.

This should give you a nice golden strong ale.

My advice is to get a brewing software like brewsmith, and read the recipes here on the board or from recipe books. You will quickly realize that you can do whatever you want, and it is so much fun. I am so happy not to just buy kits anymore, as I can do whatever I want.
