Was aiming for 5% and got a little over 7%. I primarily achieved this by over boiling the wort so I was just a little under 5 gallons and getting a higher efficiency than expected. I should have topped off the fermentor with more water to balance things out. Do you think there will be a noticeable difference between 5 and 7% ABV?

Alcohol brings flavor and mouthfeel to the party so most definately, not to mention it is no longer something you are going to be drinking liter after liter of during Oktoberfest.

That's an over 40% difference in expected ABV. If you DON'T notice the difference, I'd check your calculations... or your taste buds. :)

Well, I don't know the taste difference without making a new batch. :)

I was trying to clone a Weihenstephaner Hefeweissbier Dunkel. I guess it is now a Weihenstephaner Weizenbock Dunkel. lol
