How much yeast is too much yeast?

I put 5 gallons of fresh pressed sweet cider in the carboy last night with some potassium metabisulfite and intend to add sugar in the form of honey, I want to pitch a good healthy dose of white labs WLP001 California ale. I bought 2 tubes of it, am I safe to pitch the whole thing at once? or am I just going to overwhelm my cider. I am going to be shooting for a starting gravity of 1.068 in hopes to come out somewhere around 8.5-9% by the time all is said and done.
furthermore, is there a chart or something somewhere that anyone knows of that gives comparisons of honey to sugar as far as sweetness?

Two tubes should be fine for that gravity. I would pitch them both together.

Yes, the gravity points for both sugar and honey are well known:

Table sugar (cane sugar) - 44 gravity points

Most comercial Honey - 36 gravity points


Not so big a difference that you can't interchange them, but the extra flavor from honey is nice!
