If I use nottingham or s04 how long will it take to get down to 1.004? Will it take much longer if I bump up the starting og to 1.060 with sugar? I am trying to plan fermentor usage. I plan on racking to secondary once the cider gets to 1.004 to stop the fermentation.
 
Racking it will not stop fermentation unless cold crashed then treated, or pasteurized.

It depends on a lot of things, such as temp, yeast nutrients, etc.

It's not going to hurt anything if you rack a little premature. I racked my last batch of Nottingham after 13 days and it was at 1.008 (OG was 1.055). No nutrients were added to this batch. Temp was roughly 64-68F.
