How High OG is too high...

Hey not sure how stupid of a question this is but I couldn't quite find a specific answer, so hopefully one of you could steer me right...

I'm brewing a double red, and I have about 10 lbs malt and 5 oz of hops and I'm thinking this could put me at a pretty high OG.. my question is how high of an OG would require two packets of Yeast... I'm using Safale-05. Would 1.07 or 1.08 be around the point where I would need two packets? Thanks in advance...

How many gallon are you brewing?
Your OG will depend on your efficiency.
I think with only 10lbs of malt you won't get an OG more than 1.050 or 1.055.
So 1 pack of yeast(rehydrated of course) should be enough.

Have you ever thought about making a yeast starter and using liquid yeast. That way you never have to worry about having enough yeast cells.

Yeah I have thought about it, I just need to read a little more and pull the trigger on actually doing it....

1 pack of S-05 would be fine at the OG. that OG however is impossible if you only had 10lbs of malt, unless you meant extract

I'm thinking extract. Little chance 10 lbs of grain mailt would give that high of OG.

I would tend to pitch 2 packets at an OG of 1.074.

By rehydrate do you mean have a beer??? Can you pitch a packet later in the stage like a day or two after the first one?

Rehydrate in one cup of hot boiled water(around 30 degre Celsius) and let it for 30min,then stir it and let it another 30min.then pitch it in your cooled wort all at once.

At this point I wouldn't add more yeast. The yeast have already reproduced and adding more yeast would be a waste.
