First time brewing, first time posting and I don't know if i'm doing either correctly.
I received a gift card for my local brew store for Christmas, it was enough to get equipment and a beer kit. My choices were limited and since I'm the only one in my family who likes most good beers, I figured I would get a wheat that everyone could enjoy. I bought the wiezen and decided I didn't want a plain wiezen. So I replaced the dryed yeast in the kit with American Ale yeast and added an oz. of Ahtanum hops, along with the provided bittering and aroma,to the boil and I'm planning on dry hopping with another oz. of the same. anyone?
Just looking for input/advice/opinions.

Also, I ended up with 1.5 g's of wort , I'm worried that having to add 3.5 g's of water will give me a watery beer. Anyone?
 
The yeast replacement is fine, the American Ale yeast is a good all-around yeast for a many different types of ales, so I wouldn't worry about it too much. Again, there isn't anything wrong with dry hopping your beer, it will just give it a stronger hop aroma.

As far as adding water, I would follow the recipe and do what it says, but don't be afraid of taking gravity readings as you add water. If you don't have a hydrometer, get one because it will be the only way you will be able to determine if your anywhere near your target gravity.
 
I neglected to take that first reading,regretting that decision, but it's my first botch... Er batch so ill make sure to do that next time.

The recipe just told me to add enough water to bring it up to 5 g's, so I did.

So if the additional Hops are just for aroma what can you do to get that Hoppy bite?

Does Tossing extra in during the boil add flavor?
 
To get the extra hop bite, you want to add hops throughout your boil. The earlier additions, such as 60 minutes or 45 minutes will add a more bitterness to your beer while the later additions around 15 minutes left in the boil and later will add more aroma. If you want more hop bite, add more at the start of your boil.

if its meant to be a 5gal recipe, whether its added pre- or post-boil won't change how 'watery' it is.

you won't get very accurate readings doing this. just measure the gravity before diluting and calculate how much to add. assuming it was an extract kit, don't worry about missing your OG, it'll be very close to whatever the kit said (given the correct volume) since its a known amount of sugar.

target OG = current OG * current volume / target volume
 
The 15 min. hops are flavoring hops. Dry hops will add some flavor, but are more for aroma. Make sure to add the dry hops after 2 weeks in primary when the initial fermentation is done; you can let it sit for another week with good results. Take gravity readings to be sure you have hit FG & bottle. I use a primary only, and have no problems dry hopping with that schedule. Cheers:)
