Planning my summer batch of hefe - for this beer I want to keep it more traditional with nice hop flavor and aroma (nothing too crazy, IBU <20... just thought some citrusy hops would add a nice flavor for summer days).
5 Gallon Batch
All-grain
OG: 1.051
IBU: 15
SRM 6.8
5.8# German Wheat
4.75# German Pilsner
1.3oz Midnight Wheat (for color and to get some slight mellanadoins... decided against a decoction)
Mash: Hochkurz infusion (35 min @ 145, 45 min at 158)
80 minute boil
1.0 oz Hallertau Mittelfrueh 70 min
0.5 oz Saphir 10 min
0.5 oz Saphir 5 min
Any thoughts on the mash schedule, grain bill, or hops? I'm a bit worried that this will make the hops overpowering, but if not may also switch them to dry hop. Thanks for the help!
