Hop/kit question

I just ordered the Surly kit from Midwest and have a couple of questions.

#1 When I rack to secondary do I dry to make sure not to get any of the wert. In the directions it says after 7 days move it from primary to secondary.

#2 I have a muslin bag for my dry hops. Do I just jam it down in the carboy and then rack on top of that? For how long? I believe it says two weeks but I think that two week is for both the primary and secondary?

After the boil is done, throw away your directions. They are generally pretty poor and are designed to get you to move as fast as possible (so you can purchase another kit).

Cool your wort to pitching temps - somewhere around 70*.
Pitch your yeast and seal your bucket.
Forget about it for two weeks minimum.
Check your gravity (if you don't have a hydrometer, get one in the next two weeks).
Once gravity is stable, rack to secondary if you'd like. If not, throw your hops in the primary.
Leave alone for 4-8 days or so (dry hop time depends on you).
Cold crash if you'd like.
Use gelatin if you'd like.
Rack to bottling bucket and bottle.

Yes, the crap at the bottom of the primary.

Yeah,you want to leave that yeast & trub behind when racking.

+1. Sorry, meant to add a note like this.

Water + sugar/malt/etc. = wort

Wort + yeast = beer

Once yeast is added, it is beer (whether fermentation is ongoing or finished).

No problem. Just noticed the op needed some clarification. Also,I use muslin hop sacks from boil to dry hop with no more than an ounce of pellets per sock.
