Honey mead failure

Made a batch of honey raspberry mead about a month ago. It looks great and everything went as planned. Recipe was good, yeasties did their work. I had an OG OF 1.100, and a final of 1.000.
I racked it into a 6 gallon carboy and left it sit. The problem is. There is only about 3 gallons in a 6 gallon carboy. Im not sure if this has anything to do with this or not, i tastes watered down? Any suggestions, or should i just bottle it and let it sit and hope some flavor comes back. Or, add something to it and start over???
 
I would split it up into gallon jugs and bulk age as best you can. 3 gallons in a 6 gallon carboy seems a bit dangerous for oxidation.
