Hey guys so I just tried a a nutbrown ale that has conditioned for 3 weeks in bottle. I cracked one open last night and realized it had the common smell that all of my homebrews and my friends homebrews have had. It smelled yeasty. Does this mellow out after being in the fridge for awhile? Ive brewed five batches and to be honest I have never let bottles sit in the fridge for more then a day before drinking them. Any comments and opinions would be helpful. Thanks
 
yes, it mellows out, give it 3 more weeks and it should be gone.
 
Yea I put one case in the fridge I will try more in a few days. I think Ill let the other case sit a little longer outside of the fridge.
 
Also is it better for the yeasty smell to fade if its warm conditioning or cold conditioning??
 
The yeast smell will fade better at warm, but it also means the beer won't last as long. As long as it has had time to carbonate (3 weeks minimum at warm) it will be OK. Think of it like you are fast-forwarding the process in the warm. In the fridge, you are slowing it down. It's the same principle as preventing bacteria growing on your food when you put it in the fridge.
