I'm a pleasure delayer, lol. Just wondering how well it ages and if it gets greatly better with time (as some beers do), or if it's pretty consistently great regardless of age (i.e. no heat, no flavor fade, etc.).

I haven't received the bottle yet, so I may have to wait a little bit anyways.

HF is pretty good about releasing things when they're ready, but if you prefer stouts with a little age, do you?
 
So my buddy was extremely kind, and grabbed me one bottle of Damon when he was out there last week.

Having never had any Damon before, would you all recommend drinking fresh, or cellaring it for some period of time (if so, how long)? Thanks in advance!

The beer is probably 2-3 years old at this point after sitting in barrels and bottle conditioning. Shaun would never release a beer he didn't think was perfect as is. Drink it now, tomorrow is never promised.
 
Draft 2011 Damon on-site (May 2017) was easily the best HF stout I've had. I've not had a bottle that old, but that beer was incredible.

'11 Damon bottle I had this year was tragically not tasting as Damon should.
 
The '13 Damon peaked, I think, at like 2-3 years. Had four bottles and drank them basically every 6-9 months; thought the last bottle was the best. That said, I've thought the HF barrel aged stouts have been drinking A+ quality right out of the gates for the last couple years. Drink up!
 
'13 GoM at 2 years was amazing, in 2018 good but not as amazing. No reason to extended age Hill stouts IMO. '13 saisons can be hit or miss, but when they're good it's awesome.
 

Anyone else open a CD 19 recently? Cellared this since purchasing 2 years ago. There are notes that remind me of de dolles beers, those oxidized caramel/nutty/dried fruit notes. Certainly more complex than their shelf saisons and I enjoy it but it just seems like it hasn’t aged as well as some of their other saisons.

Here's a review of it I posted in this thread from almost a year ago. I didn't pick up anything that I specifically identified as oxidation, although maybe something related to the big "wine barrel character" (i.e. a lot of oak) could have been related to that? Anyway, it wasn't one of my favorites, and I still have a bottle left I figured I'd revisit with some time. Your post is making me want to crack it soon for comparison.

Decided to eat sausage, Vermont cheddar, and maple syrup for dinner, and figured an HF beer would be an appropriate pairing. CD 19, first time I've had it since around release (which I don't particularly remember):

Carbonation is fairly low and dissipates quickly. I'm on my final glass from the bottle with all the dregs (obviously much less clear than the pour in the photo) and it's almost got a still quality, but not quite. Huge amounts of wine barrel character in the taste on this one, almost to the point of overpowering everything else. Sharp, tart, and oaky, with some cheesiness. Not much funk at all. Very nice, but a bit one-dimensional. I have one more bottle left, I think I'm going to forget about it and see how some time treats it. If you're a fan of very wine-ish HF beers (or Lost Abbey blonde sours), you'll like this one a lot I'd guess. I preferred the bottle of 3/2015 Anna I opened the other night, in comparison.
 
Heading up on Wednesday. Looks like the crabapple CD will still be around. Very interested to try it.

I love cherries ;)

Had it about a month and a half ago. No oxidation in my bottle. Thought it was fantastic.

I dont know if it was oxidation but there was something that didnt click for me. It had similar taste notes to de dolles beer and dry sherries that i often attribute to oxidation so thats why I assumed that played a role in the CD. When I first opened it I got minerally green apple and this cinnamon orange note but as it warmed it got this cardboard and this caramel and dried fruit/nut. It just seemed disjointed and flat-it was carbonated but it had that left out open overnight beer taste. Also the head was streaked with a rusty brown but that I assume was just sediment.

Also, opened a CD19 at a share last night based on the above - I thought it was absolutely perfect and everyone at the share enjoyed. Loved it at release, but it's developed well. Well balanced, not overly tart, huge carb. Just a beautiful beer IMO.

Other recent HF ticks, BG&E last Sunday as a marathon celebratory beer. Very good, but wish I opened sooner. The maple was subtle, but it was a chocolate, oak, honey, and barrel-forward offering. I don't think I liked it as much as the 2014 batch, but I also had that last in 2015 so comparing isn't exactly fair. Very enjoyable overall. That's all from me today.

I agree I loved CD19 no oxidation issues and don't worry I opened BGE a bit ago (april) and didn't compare to 2014 bottle. Was real sweet thought I could sit on 2nd bottle. Gonna open the 2nd bottle this month likely.
 
Btw did anyone else see today in their calendar on the site they had put Clover in the fridge? Maybe onsite today or soon?

Edit: looks like they took it off the calendar. But saw it on there some days ago
