Well I racked this to a secondary today after 14 days in primary. This 1056 yeast is very different then the other yeasts I have used before which were medium to high floccuating. This stuff just hangs on forever. I left it in primary hoping that more would settle but it really doesn't want to. My FG is at 1.012 which is right on the button.
I tasted the hydro sample and it really had a toasted taste presumably from the toasted 2-row in the recipe. It was still real yeastie though. Short of filtering.... will this yeast clear better in the next couple of weeks. I hope so, but I think this is going to be my best batch yet. Cheers
