For all you HERMS brewers out there. How many burners do you use and why? I understand you need at least two, one for the boil and one for the HLT/heat exchanger but I've seen some systems use three burners, the third being used for the mash tun and I'm curious as to why. I've been planning my own HERMS system and this may help me with my design.
