Hello I am having a hard time figuring out what my evaporation rate is. I test 2 times the first time I put 5gal in my 10gal Tall boy brew pot an brought that to a boil an Time That for 15min an let it cool over night with the lid on it an I pour it back into my plastic fermenter bucket that has gallon’s mark on it an for that test I determined that my boil off rate was 2gal an hour. So I did the test again but this time I turn my heat down an I shot a video of how it was boiling an people were telling that the boil was weak an not Vigorous Enough. So what gives I don’t know what I am doing wrong here?
 
What is your question? You boiled off 2 gal/hour the first time, then????? What happened the second time when you turned it down?

You don't need to boil that vigorously. Just a light rolling boil will be fine. As long as the boil circulates the wort, you're fine. There's plenty of debate on whether or not boil vigor makes a difference. Brulosophy did an exbeeriment on it and it didn't prove to have a whole lot of weight behind it.

I would say a light rolling boil is all you need. That's what i do and i boil off about 1.5 gallons over an hour.
