I am working on a Christmas beer recipe and I want to use these spices: Ginger, Nutmeg, Seeds of Paradise, and Cinnamon Sticks....

I am not sure on amount or timing on these, so any help would be nice.

Or if you have a spice that's not on the list that you would suggest, please do...

OG: 1.072
IBU: 15-20
Batch Size: 5.65g
Mash: 152f w/ Batch Sparge
Grain: Pale, Vienna, and rye make up most of the bill
Hops: Simcoe, Cascade, and Fuggle
Yeast: London Ale and American Ale

I have heard the weaker spices should boil longer to extract more flavor, but I have not brewed with spices yet, so looking for advice on a balanced christmas beer.

Thanks!
