I brewed a peanut butter stout some time ago. It was an extract kit 5gallons.
When I opened bottles I got these gushers and the beer smelt and tasted very sour
Could someone give me some insight as to what possibly went wrong
This was only my 2nd brew
I have just dumped the whole batch. It has been made since October.

Thanks

Also here is a picture. Every bottle was the same or worse.

If smells and taste sour you got an infection....
Since they are already bottled, you really need to just pour them out. If not you are risking bottle bombs (that's happened to me).

Did you taste it on bottle day/Did it taste bad then? If you did taste it and it did taste good then you more than likely didn't sanitize your bottling bucket.

I did taste it on bottle day and it was ok, I have thrown them all out and also, thrown bottles away too just in case that may have been the problem

Everything was sanitised well or so i thought.

What did you use for sanitation? How did you wash everything?
Did you reuse commercial bottles or buy new empty ones?

I re used commercial bottles, washed in dishwasher on sanitize setting then used the vintnor with sanitiser isostar, I am now going to use starsan. Bottling bucket was washed in oxi clean free, then sanitised and sanitiser pulled through bottling wand aswell.

If all the bottles were infected, then the problem most likely lies in the transfer to the bottling bucket or the bucket itself.

How did you rack from fermenter to bucket? If using autosiphon or racking cane, then the whole thing needs to be sanitized inside and out. If via spigot on the fermenter, then that needs to be stripped and sanitized every time.

If you are using starsan or any other no-rinse sanitizer, then DO NOT rinse afterwards. You are introducing unsanitized liquid by doing that.

Basically soak everything in sanitizer until you use it, tubes and hoses both inside and outside because you never know what might come into contact with the beer until is too late.

also another thing to think about when bottling is airflow. make sure you dont have any vents on or fans blowing air around.

The only thing that comes to mind are similar to what the others have said so far.
For the bottles: They must be spotless before sanitizing. Be sure the dishwasher step is doing its job and not leaving residue or old beer gunk.
For the bottling bucket: If it has a spigot, disassemble and clean the old beer residue out between each use. Always sanitize the siphon, wand, and tubing. Soaking them in oxi-clean and running it through those items would be a good idea as well. Rinse well and sanitize afterward.
