Hey guys,

A week ago or so I made an Apple Ale with using real apple cider instead of water to fill up the primary. I used the Austin Homebrew Apple Peeler kit. I have read online that this kit will become not sweet (as I would expect) and it will become tart. My girlfriend and I made this together for our anniversary, and we are looking to sweeten it a bit. Would you suggest I use some non-fermentable sugars? If so, what kind? Should we just use some apple flavoring from our LHBS? Splenda?

What do you guys think?

that kit includes honey malt which will certainly give a sweet taste but i don't know how that kit beer will turn out, never used it.
 
My recommendation if trying to use non-fermentable sugars is to try them. Mix a few teaspoons with some water and see if you can handle the flavor. Most sweeteners (splenda/stevia)taste gross to me, though I've never tried lactose. From what I've read, lactose can give a "thicker" mouthfeel which might not be bad in the beer you're describing.

If you find one you like, add it when you bottle. Before bottling, decant a measured amount of the beer and slowly add the sweetener in measured amounts until you like the taste (try to imagine the carbonation being there). Then use the ratio of beer:sweetener to extrapolate to the entire volume you are bottling. Add the sweetener and your priming sugar, stir well, and bottle.
