Ok so I have some elderberry wine I am making, it has currently been fermenting for about a week now, it never really went in to a rapid fermentation like some of my packet wines I made and now has a gravity reading of 1.020 from a starting of 1.060 ( I have 2 demijohns with it in but the second has no yeast yet as I ran out so I took the SG from this one and the 1.020 reading from the one with the yeast in it)
It is still bubbling away a bit in the demijohn and there is a bubble in the air lock every 15-20 seconds ish, as I have not made a totally fresh home brew before is is normal? I used some wine yeast I got from the local shop and it has also had pectine, and acid blend. I will make sure I pay more attention on the second half when I get more yeast.

1. It is completely normal, airlock activity is dependent on on lot of different things
2. why not take a spoonful of wine with the yeast in it and use that to make a starter? if the gravity is dropping the yeast is active and multiplying

I will try the starter, I have looked at it this morning it does not seem to be doing anything now, the surface looks flat with no rising bubbles and the airlock is not bubbling anymore, mebbe it is to cold where I have it, might try bringing it inside the house
