Ok this is a call for you to get creative with what I have on hand for grains and hops.

I'll leave you to choose a yeast or yeast type ( i.e pilsner, ale, stout, saison etc)

All malts are 30+ pounds available and I can brew up to 15 gallon at a time..want 5 gallon or more recipes.


Vienna Malt
Marris Otter Malt
Two Row Malt
Caramel 20l

Cascade Whole Leaf
Mosaic Pellet
Mosaic Whole Leaf
Amarillo whole leaf
Eukanot whole leaf
Sterling pellet

Initial thoughts are of course a nice malty ipa with two row, marris otter and some caramel 20 or a regular plain pilsner with Vienna and caramel 20....but that's too easy ...

Let's get creative with what I have on hand.

I'm not buying anything else except maybe some yeast....( I've got bry97, us05, 04, 033, several lager yeasts and saison yeasts and some wyeast west coast ale yeast handy,)

I might have half pound of chocolate malt I can spare if absolutely necessary.
 
wrt grist it kinda matters what amounts you have on hand.
I mean if you have 5 pounds of base grains and 10 pounds of c20 there might be a problem ;)

I know you wanted something more exotic but this is what I'd do...
80% 2 row, 13% MO, 7% C20 for OG 1.054
bitter with the cascades to about 25 IBU then add the mosaics and amaraillos at at 10 min, whirlpool and dry hop. Say 3oz each at 10 min and 6oz each at whirlpool and similar dry hop.
Ferment with US-05 at 68F.
 
Could do a Vienna/American style lager along the lines of Brooklyn lager.
Either mo or 2row
With 20 percent Vienna and a splash of cara.
Cascade bittered
Amarillo aroma
Mosaic dry
Or combinations thereof.
 
I second the Vienna Lager, done with Lager yeast and some Amarillo+Mosaic action. Lightly hopped, not too crazy, just a touch of dry hopping to get that nice aroma in the nose. Would be perfect for the summer time.

You also have enough for great IPAs: US-05 + 70% 2-row and 30% MO ( NO crystal ) + Mosaic, Amarillo and Ekuanot.
 
I like MO and it forms the base of most beers I do. If I were making a 5-gallon recipe out of what you have, I'd probably do this:

10# Maris Otter
1# Vienna
1# Crystal 20L

Cascade for bittering hop. And even though I detest Mosaic, many like it and it would be a good hop to use. I'd probably use WLP001 or S-05 as the yeast. Ferment at 64 degrees, run up to 71 or so for a couple days when the krausen falls, then back to 64 for the balance of two weeks.

Nice full malty brew; how bitter or IPA-ish depends on your taste.
 
My house ale is a Maris Otter / Mosaic SMaSH.
10# Maris Otter
1/2 oz. Mosaic FWH
1/2 oz. Mosaic 60 min.
1 oz. Mosaic 15 min.
1 oz. Mosaic 0 min. (Hop stand)
WLP 001 California ale yeast. (Any nice, clean yeast will do)
Mash @152°
Nice easy drinking ale. I have brewed this with a dry hop but prefer this without the dry hop.

Funny that you mention Brooklyn Lager , because I have a Brooklyn Brewery recipes (got it from the ych website) that's a cross between an ale and pilsner that uses cascade and eukanot (4oz of ekuanot in dry hop to be precise) and an ale or lager yeast.


What are your thoughts on switching the MO for the Vienna as the base and going 20% MO and a light addition of Cara for a Vienna Lager with the added Hops twist?


Also I Did a Vienna / Cascade SMASH and was playing with an MO SMASH with Mosaic or Sterling as a future brew.

Keep the ideas coming!
 
I think I would try an attempt at a hybrid beer.

Maris Otter
Vienna

Cascade for bittering
Cascade and Amarillo for flavor and aroma. I don't know the other hops listed.

Then use a suitable lager yeast that can handle ale temperatures and make a "steam" beer?

I would leave it to you for proportions since everyone's taste is different.

Sure it would be good. I really like Vienna, but tend to go up to 50 percent of base malt with it and not over, find it gets a bit too round tasting (I know that doesn't make sense, but it's how I describe it)
Also I wondered about eukanot, it's a great hop just did a mega single hop neipa I'm just drinking the last glass of now with it, but there is a savoury green pepper twang to it I'm not sure would work so well in a lager style, but probably would..
Tbh I reckon you could pretty much chuck those ingredients in a pot blindfolded and come up winning. I think a lot of coming up with recipes is help with focusing your appreciation. Id limit the cara to a small addition though and let the base malt shine

What about a vienna lager(ish) IPL?

70% vienna (malty flavor)
20% 2 row (primarily for more sugars)
8% MO (compound the malty profile)
2% C20 (more color and a slight caramel lagerish flavor)

Mash at a good medium 150-152

Cascade bittering to about 40(ish) ibu
Mosaic/Amarillo at 5 (to about 15 ibu)

Mosaic/Amarillo dry hop after initial ferm is done using Lager yeast fermented a tad warm.

Secondary or keg after 8 days of dry hopping and chill to lager for about 30 days.



Or swap the vienna with 2 row....i have always wanted to brew a good IPL
 
OR...

Do a smash....pick 1 malt and 1 hop, and brew away, using any ale yeast you have readily available

Got sidetracked...it's on my brew list this weekend if westhwe stays craptastic and I'm stuck at home.

Also gave a lemon drop saison that I have to brew ( kit from Atlantic home brew)
