Hi all! I am very new to the world of Kombucha and started off with the easy way to brew( was given a bottle of already made kombucha and add fruit juice to the mix) and so far have been successful with my brews. I live in Costa Rica so it is VERY hot and humid so fermentation time is a fraction of the regular time. I was sticking to apple and grape juices and decided to give pineapple juice a try and let it sit for a day and now my kombucha has a very thick layer of what looks like curdled milk. What did I do wrong? I will be embarking on my first journey of making my own scoby but for the time being, this is all I've got. Any advice or help or insight as to what this curdled mass might be would be greatly appreciated!
