I'm Sam and I'm VERY new to beer, but have made a ton of mead and distilled alcohol in the past. I've only tried a couple extract recipes so far, but am just about ready to try out an all grain I think. So far I'm planning on making mostly stout beers, but maybe after I get a good repeatable one nailed down, I'll try my hand at other varieties.
Right now I have a double chocolate stout in primary, a honey amber ale in secondary (my 2nd and 3rd homebrew attempts, respectively), and about 10 gallons of rum just a few days out from distilling.
I'm scouring the archives on this board trying to absorb as much as I can.... so much info will about make a guy's head explode.
