Hey all, just wanted to say hi.

Just brewed my first batch, an Amber Ale. Brewed 12/20, Bottled 12/27. Opened the first bottle tonight to see how it was going. So far so good.
 
Nice to see homebrewing is going strong in Massachusetts!

I just joined myself so greetings from Worcester MA. I started with a buddies equipment in October and was thrilled with the quality of my first 2 batches. Bought my own equipment and now I am hooked!
 
7 days from brew to bottle.... wow that's fast.

Keep them cold and drink them fast. I'm afraid you might have made bottle bombs.
Did you take OG and FG readings to make sure fermenttation was done?

As boo boo said, 7 days is pretty quick. Although I suppose it can be done, I'd be careful with the bottles. There could be some fermentation still going on, and the pressure build up inside the bottles will create bottle bombs. Keep 'em in the fridge to minimize the fermentation.

Also, brew another batch soon. You'll finish the first one too quick, and not having anything ready when it's gone is a real bummer.
 
Like durp, I bottled my first 2 batches after 7 days because that's what the kit instructions said to do. Both batches came out nicely and have continued to improve while they condition in the bottle.

Having read a lot from this forum, I am really looking forward to my next 2 batches which I am keeping in the primary for 3 weeks.

As for the 7 day fermentation, WickedLB summed it up. That's what the kit said to do, and as I'm still a noob, I do what the instructions say :)

I do think that fermentation was done, or at least close. I've opened two since then (it's the Amber Ale), and they both turned out pretty good. I'll certainly keep an eye out on the "bottle bomb" stuff too, but will mostly consume all of them in 2 weeks during a brush burning party :)

As for brewing stuff, I'm looking to do an Imperial Pumpkin Stout next. I created another post here to see if I could get some insight into brewing smaller batches to vary the spice mixtures. If I can get 3-4 growlers up and running with different spices and then the remaining batch would probably just be the basic kit recipe.

also also, technically I'm in Tewksbury, but didn't realize the extent of MA brewers on this site (or even really the size of the site, wowwww).

I never caught the whole 7 day thing.... Good point.... I bottled a hefeweizen after 10 days once, after grav went from 1056 to 1010, and I still got the last half of my batch, which I was aging, to super carbonate. Open one, and the glass you fill is more than half head!!! - Oh but what lovely lace and retention!!
