Hello! I have an extra 5 gal bucket fermenter and was contemplating what I want to make in it. I do partial mash for now until I get my mash tun completed.. was thinking about a nice Hef.

I know Hefs have quite the violent fermentation process so my question is how much headroom should I allow in the bucket? Should I make a 4 gallon batch size?

I have Beersmith2 so scaling would be no problemo

With WY3068 make a three gallon batch in a five gallon bucket. Over pitch and ferment at 62° to 63° for clove. Under pitch and higher temp for banana flavor.
