I do an ice bath to chill but it’s taking longer Than I want to get to 70. I’d like to pitch lower since I usually ferment between 64-68. If I get it down to around 80-90 can i pour in my carboys and place in my cooler (with cold water) and pitch once temp drops to 64? I’d of course put a cap on the carboys to keep stuff out. these are 1 gallon carboys
 
80-90 should be fine....it's not really a thermal shock since it takes you some time to pour it..
That being said, going and dunking the carboy in cold water at that point won't be that great for the glass integrity...
I'd just airlock it as you said and stick it in the fridge overnight...come back in the morning and pitch...
I'm moving toward getting a pond immersion pump to finish the chill from 80F down to 65F...
I hate waiting overnight but it beats an estery beer that comes from pitching too hot...

PS - these glass vessels are renowned for developing small microcracks that can eventually become a big problem. Treat your glass like it contains nitroglycerine...
