I'm new to the hobby but, after living in Germany for 10 years, I know what I like when it comes to Hefe Weissens. I started home brewing this year after I became tired of buying individual bottles at my local shop that were good but not entirely fresh. They were like faint memories of the beers I enjoyed overseas. To make a long story short. My 4th attempt at making my own weissen is definitely in the ballpark and I finally got that great whipped cream-like head that lasts to the final drop. I think I'll stick with what I'm doing and maybe start playing with the water profile (I just used tap water) and tweak the fermentation temp a little. Thanks to all that have given me their thoughts and advice. This is truly a hobby that can satisfy.
