I have this fryer and while cooking my thanksgiving turkey thought this exact same thing. Only problem is its not flame sensing, but I would be Interested to see what others think.

I did. I have it wired to a PID, it worked pretty good. It's connected to N/O port on PID, when temp low, puts short on line to temp conn. on fryer controller, electronic igniter and gas valve fire up, till PID temp reached, then it shuts off. The prob is it's a weak burner. I'm in the process of rebuilding it. installed an asco solenoid on gas line and going to try to just use the fryer controller just as an electronic igniter. we'll see.
