Nice forum, hope to pick up some good ideas here.
I've been making cider for a few years. I like it the old fashioned way and typically just let the wild yeast have at it. Makes me feel all anglo-saxon-y.
Sometimes I use a little champagne yeast to make a stronger, clearer beverage that my wife likes to back sweeten with juice or Sprite.
Made a few wines, but they seem moodier to me, somehow. Scrumpy can take a ton of abuse in the preparation process and still turn out drinkable. Or maybe my expectations are just higher for wine.
