I've lurked here on occasion recently and thought I'd sign up, say hello and share a story. I just got started with brewing earlier this year when I moved into a new house that has lots more space than my previous house. A friend of mine had all the equipment and had brewed a few batches but doesn't have much space in his current rental house so he brought all his stuff to my place and we started brewing together. So far we've had good success with several extract kits from Midwest.

The last one was an Irish Stout and contrary to my experience with the previous batches I didn't notice any activity in the airlock the next day. After two days I started to get a little nervous but I came here and poked around and the overwhelming advice was "relax, give it time". And sure enough, a short time later the airlock was happily bubbling away. One mistake I made was forgetting to smack the yeast package until a couple hours before brewing time so perhaps that contributed to the time lag. At any rate, we've since bottled that batch. I just had the first one this past weekend and it was fabulous!
